Direct answer
Use a Minecraft client version that the server supports. If the server is on one Minecraft release and your client is on another, update/downgrade the client or deliberately update the server after taking a backup.
Diagnosis to use: “Outdated client” and “Outdated server” indicate a protocol or edition mismatch, not necessarily an internet connection problem.
Confirm the server’s actual version
Read the startup log or server list entry. Do not assume the JAR filename tells the truth if you have recently replaced files. On modded servers, also confirm the loader and modpack version, not only the Minecraft number.
What to collect: Record the exact client release and server startup version. A modpack also needs matching loader and mod versions; protocol bridges may support only documented version combinations.
Do not update a production world blindly
Back up before changing the server version. Minecraft worlds are normally upgraded when opened by a newer server, and downgrading an upgraded world is not supported by Paper.
Multi-version plugins are optional, not magic
A compatibility plugin such as ViaVersion can intentionally allow additional client protocol versions on supported server software, but it does not turn an old server into a new Minecraft version or make mismatched modpacks compatible. Use the plugin’s own compatibility documentation if you choose that design.
Targeted repair: Use a supported client/server pair. If maintaining cross-version access, update the appropriate protocol bridge on the correct backend/proxy and follow its compatibility notes.
Verify after the change: Connect from a supported clean client first, then test the originally failing client without changing unrelated network settings.
If the error appears after a modpack update
Match the complete pack release on both sides. A client on “Minecraft 1.21.x” can still be incompatible if its loader or required mod versions differ from the server.
